Easy Quinoa Meals

For Quinoa and Riced Cauliflower
 1) cook quinoa according to package directions 
2) cut up your favorite veggies, pictured here are carrots, celery and green pepper, and stir fry in a ceramic skillet in a little olive oil.
3) add riced cauliflower and pre-cooked quinoa to the skillet; allow the cauliflower to cook and the flavors to meld. 
small secret: Costco sells frozen single-ingredient organic riced cauliflower in a four pack. It is so much easier than ricing cauliflower in any other way! Just add it to the skillet slightly thawed.
4) shred some parmigiana reggiano cheese on top and mix in. (Optional for vegan or dairy-free)
5) for extra crunch and a little salt when serving crumble sea salt kettle chips around the edges


For broccoli and cashew quinoa burrito. 
1) soak the cashews overnight. Drain and rinse- omit for low nickel or nut allergy
2) cook the quinoa according to package directions
3) Saute or steam broccoli
4) mix ingredients together and wrap in a whole-wheat pita or a potato tortilla that has been defrosted and heated for 30 seconds.
